After cold de-juicing to maximise fruit expression, the juice was fermented using a selection of yeasts that enhanced the vibrant characters. Gentle treatment
of the wine while preparing for bottle has ensured the complex array of fruit characters are preserved in their full intensity.
Wonderful lifted lively aromas of gooseberry and sweet tropical fruits are held tightly by a mineral backbone which given time, will develop to lend a lovely softness to the wine. A wine with great depth of flavor and well balanced acid gives length and an amazing lift of fresh summer peach and nectarine.
Orange wines, a growing wine segment and a popular alternative to Rose. The lovely orange colour comes from extended maceration time (skin contact using white and red grapes). Made from a blend of 5 grapes. Gewürztraminer, Pinot Blanc, Pinot Gris (typical pink/grey in colour), Pinot Noir and Chardonnay. Each component was harvested and fermented on its skins until the wine was dry (average of 21 days on skins, expect Pinot Noir, 3 days). The wine was blended, left to condition in tank before being prepared for bottling. Aromas of pear, apricot and strawberries. The wine has a range of flavour profiles from stone fruits to summer berries with a touch of herbal spice. The wine finishes off dry and has an extremely high drinkability.
This Natural Sauvignon Blanc was handpicked, hand destemmed and then fermented on its skins, at very cool temperatures. After ferment the wine, with its skins, was left to age for 3 months. Drained, and lightly basket pressed the wine was left to settle for two weeks in old wine barrel. Following this the wine was racked and bottled with no fining and no filtration. There will be sediment in this wine.
On the palate this wine makes a statement. Showing many typical Sauvignon Blanc characters with moderately deep aromas of tropical fruits and fresh herbs. Soft, elegant and smooth on the palate with a soft, crisp acidity finish. Best to be drunk at 8-12 degrees where you really get to appreciate the characters from the whole berry ferment.

This wine shows an array of fruit characters, ranging from citrus through to tropical notes. This is complemented by some secondary characters from the natural yeast ferments and also some barrel aging. The palate has an elegant
structure with a creamy, textural mid-palate and a long finish.
